Kathy...Can I use anything besides the flour in your homemade cake release recipe (I am gluten intolerant)?

Sweet Wise Response - In our house, we make our own fresh ground flour by grinding wheat in small electric grain mill. We also grind many other grains ourselves including Quinoa and Rice. I'm sure an alternative grain like one of these will work fine.

Hi. Id like to know how to bake a cake that comes out of the oven flat. I use wilton strips and that helps, but is there another way?

Sweet Wise Reponse - Use warm ingredients and if you are baking a large cake, lower the baking temp about 10 Percent.

Take a look at our baking tips in some of our recipes. Having warm ingredients, lowering your oven tempreture for larger size cakes and using bake even strips are all factors leading to a beautiful flat cake right out of the oven.
